Happy Fall!

I think fall is finally here!  While we were almost 90 the other day, we are only supposed to be in the high 60's today!  I look forward to this time of the year when I can pull out long sleeved shirts and sweaters!  

I love how food brings back fun childhood memories!  I recently was reminded of a fun fall memory from one of my mom's recipes!  Have you ever had Pumpkin bars?  Well growing up at our house they weren't Pumpkin bars they were "Spice" bars!  I guess we were pretty picky eaters, I think Jon would agree with that, so my mom called them spice bars knowing we wouldn't eat them if we knew there was pumpkin in them!  My mom was pretty sneaking about it too!  I don't remember my mom making them with us, she would just have them on the counter after we got home from school! 

I have had a couple of people call me about this recipe so I thought I would post it!  Pumpkin is not something I keep in my pantry, so I guess I will have to make a trip to the store and get some so I can make some Spice bars for my kids, but for now I am hitting the books to prepare for my next Biology test! 

Pumpkin "Spice" Bars
4 eggs
1 2/3 Cup granulated sugar
1 cup oil
1 16oz. can pumpkin
1 tsp. salt
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp. baking soda

Beat eggs, sugar, oil and pumpkin until light and fluffy. Stir together flour baking powder, cinnamon, salt & baking soda. Add pumpkin and mix thoroughly. Spread batter in ungreased cookie sheet (15x10).

Bake at 350 for 25-30 minutes.

Frosting
1 3oz. package cream cheese (softened)
1/2 cup butter
Mix butter and cream cheese together add:
1 tsp. vanilla
2 cups powdered sugar

Frost pumpkin bars after they a cooled!

I got this recipe from Morag a few weeks ago. She told me the same story about them being "spice bars". Funny. I'd have to agree with Jon, Bri is pretty picky too!! They are way yummy!!

That's funny how we have the same memory of never seeing Mom make them. When I made them the other day (for the first time) I thought you used a 9x13 pan. Andy asked, "What did your Mom use?" I thought about it and only remembered them cut into squares with a candy corn on top.
By the way, I made 2 batches because I only had the big 30 oz can of pumpkin. (Didn't want to waste it! ;o) ) I made one with 1/2 cup applesauce and 1/2 cup of oil and the other batch with 1 cup of oil. Andy and I agree that the one with the applesauce was much better. Maybe next time I'll cut out the oil and just use applesauce.
