Carson loves to help in the kitchen and I thought I would have him help me make Grandma Diane's enchiladas for dinner. Here are the steps for making these enchiladas:
1. Make Grandma Diane's enchilada sauce.
2. Put on Mom's apron and preheat the oven to 350.
3. Wash your hands and get all the ingredients out.
4. Dip tortillas in enchilada sauce. (I normally use flour tortillas when I make these, but I thought we would try corn tonight. Not a good idea. There must be a secret to making enchiladas with corn tortillas that I don't know about!)
Make sure to coat both sides of the tortilla.
5. Put the tortilla in the pan and lay filling down the middle (chicken, beef, cheese, etc) and roll up. Repeat these steps until the pan is full.
6. Take remaining sauce and spread over top of rolled enchiladas.
7. Top with cheese!
All done and ready to put in the oven!
8. Place in oven and cook for 30 minutes and then enjoy!
Carson did a great job, with little help! I forgot to take a picture after it was baked, but we enjoyed eating!
(I think I will stick to making enchiladas with flour tortillas, the corn tortillas seems to soak up the sauce a little too much!)

I LOVE when the kids help in the kitchen! They makes SUCH A MESS but it's great! =) Those look yummy!! I think I'll make them tomorrow...

If you like corn tortillas Andy's Mom makes a enchilada casserole with corn tortillas that I use Mom's sauce with. You put some sauce at the bottom of a 9 x 13 pan, tear the corn tortillas into pieces and place over sauce, sprinkle with cheese, choice of meat, olives, corn (really whatever you like), and pour some more sauce over it and repeat the layering 2 more times. Bake 350 for 30 minutes or until bubbly. I've found to be generous with the sauce as it's too dry if you skimp. I make regular enchiladas much more often than this recipe but sometimes it's nice to have a change.

Okay Kim, my friend is married to a hispanic and she told me that the trick to using corn torts is that you fry them just for a little bit in oil. Let them dry on a paper towel and then stuff. I haven't tried it yet. We'll have to let each other know how it works. I'm making them for Kurt's bday on Sat. Heather and Stephanie are going to come down. I'm counting down the days.
